Chicken Thigh Stuffed with Ham and Cheese

Ingredients

4 chicken thighs 4 slices of ham 100 gr. of Manchego cheese Don Bernardo 250 gr. of mushrooms 1 spring onion 4 cloves of garlic ½ l. of chicken broth 1 glass of white wine 1 tablespoon of flour extra virgin olive oil salt pepper parsley

Preparation

Clean the thighs, removing the bones. Lay them on a flat surface and season with salt and pepper. Fill each thigh with a slice of ham and a couple of pieces of cheese. Wrap them and tie them with special cooking string. Place them on the oven tray, drizzle with a little oil and white wine. Cook them in the oven at 200ºC for 20 minutes. Chop the spring onion and 2 cloves of garlic and sauté them in a pot with oil. Add the flour, sauté briefly and pour in the broth. Season, sprinkle with chopped parsley and let it cook for 6-8 minutes. Slice 2 cloves of garlic and brown them in a pan with oil, add the cleaned and quartered mushrooms. Cook on low heat for 6-8 minutes. Remove the thighs, take off the string, and place them on a platter. Serve the mushrooms on one side and the sauce on the other. Decorate with a sprig of parsley.
